Opis Flam Classico is a blend of single vineyard Cabernet Sauvignon and Merlot - from two distinctly different terroirs, the Cabernet Sauvignon comes from a vineyard rooted in volcanic soil of the upper Galilee 700 meters above sea level. The Merlot is from a vineyard on the slopes of the Judean Hills on the way to Jerusalem. The grapes are hand picked after selection during the early morning hours. The wine is fermented in vertical temperature controlled stainless steel tanks at 24-28c in order to extract color flavors and tannins,then aged in 225 L American and French oak barrels for a ... The final blend of both growths is assembled then bottled then bottle aged in our temperature controlled warehouse to mature the essential characteristics of both varieties, for at least four months prior to release.
